#24- Grilled Chicken Waldorf Salad

Here's a light salad idea for the warmer days ahead. Combining a classic salad style with some fresh grilling, it's sure to please.

Ingredients (for four servings): 12 well sized chicken tenders, 1 bag of green salad mix, 2 red delicious apples, 1/2 cup diced celery, 1 1/2 oz. (an individual sized box) of golden raisons, 1/2 cup walnut pieces coursely broken, 3/4 cups mayonaise, 3 tablespoons cream (optional), 4 tablespoons Terriaki sauce, 1 tablespoon light olive oil, 1/2 teaspoon of salt.

Preparation: Marinate the chicken tenders in the Terriaki sauce for half an hour. Core both apples, but peel only one (some skin adds a nice touch of color) then cut them into small pieces.

Cooking: Grill the chicken tenders until just done. They should feel moist and plump...well about as plump as a chicken tender could be, anyway. Put aside. Now in a small, shallow pan salt and gently toast the walnuts after first adding the oil to the warm pan. Put aside. Combine the mayonaise and cream in a deep bowl and stir well until blended. Now add the chopped apple and celery, and the raisons and walnuts. Mix well.

Serve: In big scoops over beds of salad greens surrounded by the grilled chicken. Garnish with seedless grapes. HOME
