#33- Oven Baked Spare Ribs

Here's my mother's recipe for fall off the bone spare ribs. I believe it originated with Craig Claiborne of the New York Times back in the 50's.

Ingredients:1 cup ketchup, 1/4 cup vinegar, 1/4 cup Worcestershire sauce, 1 tsp. salt, 1 tsp. black pepper, 2 tsp. chili powder, 1/4 tsp. ground red pepper, 1 medium onion, chopped, 1 1/2 cups water, 3-4 lbs. pork spare ribs.

Preparation: Add the ketchup, vinegar, Worcestershire sauce, onion and seasonings to 1 1/2 cups of water. Stir well. Place ribs in a baking pan and pour the sauce mixture over evenly.

Cooking: Cover with foil and bake in 350 degree oven for 1 1/2 to 2 hours. Uncover for the last half hour.

Serve: Over rice or with a huge baked potato. A good Pinot Noir pairs well with this dish. HOME
