#9- Pasta Sauce With Meat

Here's the Bubba's recipe for a hearty meat pasta sauce.

Ingredients (for lots...enough to freeze): 1 1/2 lbs. ground pork, 1 lb. sausage meat, one 28 oz. can tomato puree, two 28 oz. cans crushed tomatos, two 28 oz. cans whole plum tomatos ( try to use Redpack. It makes a huge difference, i.e. their crushed tomatos are exactly that. Read the ingredients label on other brands), 1 cup dry red wine, 3 cloves finely chopped garlic, 4 cloves whole garlic, 1/2 cup extra virgin olive oil, 1/2 cup chopped fresh parsley, 1/2 cup chopped fresh basil leaves, 2 teaspoons dried basil flakes, 2 teaspoons fennel seed, 1 teaspoon crushed black pepper, 2 teaspoons onion powder, 1 teaspoon sugar, 1/3 teaspoon cinnamon

Cooking: In a large frying pan, brown the mixture of ground pork and sausage meat. Drain the fat and water and put aside. Now pre-heat a large sauce pot, add the olive oil and chopped garlic and sautee until the garlic is slightly brown. Add the red wine and crank up the heat to boiling. Stir the pot as the alcohol burns out of the wine. About 2 minutes. Now add the tomatos and meat and once again bring to a boil. Add the remaining ingredients with the exception of the parsley, reduce heat and simmer uncovered for at least an hour (I prefer 3 hours). Stir as often as you can. Add the parsley about 15 minutes before you plan to serve.

Serve: Over your favorite pasta, with a tossed salad and some crispy garlic bread. You may want to fish out those 4 whole garlic cloves before you serve. HOME
