#37- Sausage, Pepper and Onion Frittata

Forget the classic sausage and pepper hero standby at the feast. Try a Frittata. Delicious.

Ingredients: 1 medium bell pepper cut into wedges, 1 cut up large onion , 2 previously cooked Italian sausages (I'm using the hot type here) cut into small pieces, 6 eggs beaten, 2 tablespoons half and half, 1 level teaspoon Herbes de Province or Italian seasoning, 1 tablespoon olive oil, salt and pepper to taste.

Preparation: Preheat oven to 400 degrees. In a large bowl beat the eggs adding the half and half and seasonings. Fry the peppers and onions in the olive oil until golden. Now add the sausage, peppers and onion to the bowl. Stir well.

Cooking: Coat a medium size baking pan or dish with a small amount of olive oil, add the mixture and bake for 20 to 30 minutes.

Serve: With your favorite dipping sauce or just plain old ketchup. HOME
