#36- Baked Cod

Oven baked cod fish for two— the sauce makes a difference.

Ingredients: A 1 pound cod fillet, 3 tblsp. mayonaise, 1 tsp. Dijon mustard, juice of half a lemon, a dash of Worcestershire sauce, 1/3 tsp. smoked paprika , crushed black pepper.

Preparation: In a small bowl, wisk the ingredients saving the pepper for later. Rinse and pat dry the cod fillet and place on a foil lined baking sheet. Spoon the mixture evenly over the fillet and finish with a twist or two of the peppermill. Bake in a 400 degree oven for 10 to 15 minutes being careful not to overcook the fish.

Serve: With your choice of vegetables and perhaps a good dry white wine or sparkling water. HOME
