#2- Quick & easy white clam sauce.

This time let's look at a tasty and easy to prepare white clam sause to grace your linguine.

Ingredients (for four very hearty servings): One 2 lb. can of chopped sea clams, 2 large cloves of garlic, 1 handful of fresh Italian parsley, 1 handful of fresh basil, 1/4 cup of Italian extra virgin olive oil, 1/2 cup of dry white wine (no Carlo Rossi please), 1/2 teaspoon of sugar (optional) and fresh black pepper to taste.

Preparation: Peel and finely dice garlic cloves, wash, dry and finely chop basil and parsley, open canned clams, preheat large saucepan and add oil.

Cooking: Sautee garlic in oil until slightly brown, add wine and bring to fast boil. Now add clams and all their juices. Lower heat to simmer. Add basil, ground pepper (and sugar if you choose) and simmer for 15 minutes. Now add parsley and simmer 5 minutes more.

Serve: over linguini accompanied by toasted garlic bread and a small mixed salad dressed with olive oil, balsamic vinegar and grated pecorino or parmesan cheese. HOME
