#14- Bourbon Sweet Potatos

Sweet potatos, a Thanksgiving Day favorite, done differently. And easier to make than the standard baked whipped sweet potatoes with mini marshmallows on top. Once you've served it you're sure to be asked for the recipe.

Ingredients: 4-6 medium yams, 3 Tbsps. unsalted butter, 3/4 cups maple syrup (you can substitute with Log Cabin or Aunt Jemima type store brands, but real maple syrup is best), 1 1/2 cups bourbon (Old Crow or Jim Beam will do just fine, don't waste your money on a top shelf bourbon), 1/4 cup chicken stock.

Preparation: Peel the yams and cut into pieces, about 8 pieces per yam.

Cooking: Place the yams in a saucepan, cover with cold water, and bring to a boil. Reduce heat and simmer until they are just tender but still firm, about 20 minutes. Drain well. Melt the butter in a skillet. Add the maple syrup and bourbon and cook over medium heat, stirring frequently, until the mixture is reduced to a syrupy consistancy, 15 minutes or so. Add the yams and stir until completely coated. Then add the stock and simmer over low heat for 10-15 minutes.

Serve: As a side vegetable with that plump Thanksgiving turkey, or winter pork roast, or roasted duckling, or Virginia ham... HOME
